At the young age of 23 years old, Virginia was terminally ill and given little chance of surviving the medical diagnosis of Crohn’s disease and Takayasu Ateritis. Doctors recommended surgery and steroids. Ginny rejected these harsh temporary remedies that were not helping. After suffering a stroke, she was depressed and bedridden. She not only had the manifestation of the two diseases but also had to contend with the strong side effects from the medicines.
In her desperate search, she learned about a nutritional plan called Macrobiotics. After adopting an eating program of whole foods and learning to change her lifestyle according to her body’s needs, Ginny was symptom free within months. This relief came after seven years of suffering the painful symptoms of digestive inflammation and with multiple hospital visits. The healing experience brought her knowledge about the workings of her body and the understanding between food and health. Her complete recovery not only gave her complete relief from her illness, but also the benefit of a life full of energy and vitality. She noticed that as her health was restored, her body also became flexible and youthful in appearance.
Following 28 years of glowing health, she has shared her knowledge of healing practices that sustain lifelong health. For the last 15 years she has consulted with clients all over the world. Her focus is educating people – young and old – on all aspects of Intestinal Bowel Disease. Her expertise is in facilitating healing of the digestive track at whatever stage or condition it is in. Macrobiotic principles compliment medical treatment and are compatible with all religions and cultures. Recognized as one of the leading macrobiotic counselors, she is the author of the book Controlling Crohn’s Disease the Natural Way, now in its third edition. Virginia also founded the Ki of Life Learning Center, a nonprofit residential study house in 2003. She was counselor and program director until April 2009. In the residential venue people are taught, one on one, how to change detrimental lifestyle habits and reclaim their health. The home atmosphere coupled with Ginny’s caring direction, along with her dedicated staff, helped to empower people to take the knowledge and results home and build on what they have experienced. Clients enjoyed personalized consultations and coaching, lectures, and hands-on cooking classes. Virginia continues to provide personalized residential and non residential guidance for healing. She is active in educating on the prevention of Crohn's and Colitis. She is a regular speaker at area universities and teaches in Canada, England and Spain.
